2 (15-ounce) cans cream style corn
2/3 cup sugar or artificial sweetener
4 tablespoons flour
1 cup milk
2 teaspoons salt
1/4 teaspoon pepper
4 eggs
4 tablespoons melted butter or margarine

Mix all together except butter or margarine. Pour into greased baking dish. Pour melted butter or margarine on top. Bake in 325 degree oven about one hour fifteen minutes or until a dinner knife comes out clean.

Chicken Tortilla Chowder
Recipe By : Quick Cooking-July/Aug/98
Serving Size : 8

1 can (14-1/2oz) chicken broth
1 can (10-3/4oz) condensed cream of chicken soup -- undiluted
1 can (10-3/4oz) condensed cream of potato soup -- undiluted
1 1/2 cups milk
2 cups cubed cooked chicken
1 can (11oz) Mexicorn
1 jar (4-1/2oz) sliced mushrooms -- drained
1 can (4oz) chopped green chilies
1/4 cup thinly sliced green onions
4 (6-7") flour tortilla -- cut in 1/2" strips
1 1/2 cups (6oz) shredded cheddar cheese

In a Dutch oven or soup kettle, combine broth, soups and milk. Add the chicken, corn, mushrooms, chilies, and onion; mix well.

Bring to a boil. Add the tortilla strips. Reduce heat; simmer, uncovered, for 8-10 min. or until heated through. Add cheese; stir just until melted. Serve immediately.

1 pound hamberger
1 small chopped onion
2 cans black beans,drained and rinsed
1 can corn
1 can rotel
1/2 - 1 teaspoon cumin
1/2 teaspoon garlic salt.
flour tortillas

In a skillet brown hamberger and drain. Add remaining ingredients except tortillas and stir. (cumin and garlic can be done to your taste) Allow to simmer until all juice has evaporated
stiring occasionally. Serve in tortillas by them self or with sour cream and salsa. (meat can be omitted if you prefer a vegaterian taco)

2 c. cooked corn
1/2 c. kidney beans
1 tomato, chopped
1 stalk celery, sliced thin
1/2 small onion, chopped
1 tsp. salt
1/8 tsp. cumin
1/3 c. salad dressing or mayonaisse

Mix ingredients together, chill and serve. Also very good when first mixed while still warm. This is one of my husbands favorites and is very delicious.

2 cups yellow cornmeal
2 cups all-purpose flour
2 1/2 cups milk
1/2 cup real bacon bits
1/2 cup (1 stick) butter, melted
2 eggs
2 tablespoons baking powder
2 teaspoons salt

Preheat the oven to 425 degrees F. Coat a 9- by 13-inch baking pan with nonstick cooking spray. In a large bowl, combine all the ingredients; mix well and place in the baking pan. Bake for 30 to 35 minutes, or until a wooden toothpick inserted in the center comes out clean. Cut into squares and serve warm.

Serves 6 to 8

2 cans (15 1/4 ounces each) whole-kernel corn, drained
1 small green bell pepper, finely chopped
1 small red bell pepper, finely chopped
1/4 cup Italian dressing
In a medium bowl, combine all the ingredients; mix well. Cover and chill for at least 1 hour before serving.

NOTE: Sure, you can make this with fresh corn instead of canned. Just use leftover cooked corn or boil a few ears, then cool and strip off the kernels.

4 ears of fresh
2 Tb of Olive Oil
Juice (and pulp!) of 4 fresh limes
2-3 Tb of chili powder
1 ts salt

In a flat food storage container, combine olive oil, lime juice, chili powder and salt and mix well. Marinate the corn in the mixture for at least 2 hours, turning frequently to coat the cobs evenly.

Grill, covered, over red-hot coals for about 10 minutes, turning frequently to cook evenly. The corn will have a "charred" appearance when it's done.

2 bags of popcorn
3/4 c. maple syrup
4 Tbl. butter
1/4 tsp. salt
1/4 tsp. baking soda
1/4 tsp. vanilla

Mix syrup, butter and salt in pan. Heat until melted, simmer for 3 minutes without stirring.

Remove from heat, add soda and vanilla. Pour over popcorn.

Place half onto prepared cookie sheet. Bake at 300 degrees for 15 minutes. Break apart and store in airtight container.

El Torito's Sweet Corn Cakes

2 tablespoons lard
1/4 cup butter
1/2 cup masa harina
3 Tablespoons cold water
10 ounces frozen corn kernels or 2 large cobs, kernels removed
3 tablespoons cornmeal
1/4 cup sugar
2 Tablespoons whipping cream
1/4 teaspoon baking powder
1/4 teaspoon salt

Place lard and butter in a mixer bowl and whip until butter softens.
Continue whipping until mixture becomes fluffy and creamy. Add
masa gradually and mix until thoroughly incorporated. Add water
gradually, mixing thoroughly. Place corn kernels in blender and
blend until coarsely chopped. Stir into masa mixture. Place
cornmeal, sugar, whipping cream, baking powder and salt in large
mixing bowl. Mix quickly. Add butter-masa mixture. Mix just until
blended. Pour into 8" buttered baking pan. Cover with foil and
bake at 350 for 40 to 50 minutes, or until corn carke has firm
texture. Allow to stand at room temperature 15 minutes before
cutting. Cut into squares or use small ice cream scoop. Makes 10
(2 oz.) servings.

CORNY CORN MUFFINS

1 c. whole wheat flour
1 c. corn meal
1/4 c. sugar
4 tsp. baking powder
1/2 tsp. salt
2 eggs
1 c. milk
3 Tbsp. butter
1 c. cream style corn

Preheat oven to 425 degrees. Combine flour, cornmeal, sugar, baking powder and salt in large bowl. Combine eggs, milk, butter and corn in bowl. Add to flour. Pour in muffin pan.

Bake 20 minutes.

CORN SPOON BREAD

2 eggs, slightly beaten
1 (8 1/2 oz.) can corn,
drained
1 (8 1/2 oz.) cream-style corn
1 c. sour cream
1/2 c. melted butter (1 stick)
1 (8 1/2 oz.) box Jiffy
cornbread mix
1 c. grated Colby cheese
(optional)

Mix all ingredients and pour into a greased 2 quart casserole dish. Sprinkle grated cheese on top, if desired.

Bake in a 350 degrees oven for 30 to 40 minutes or when knife inserted into center comes out clean. (Used as a side dish.)

POPCORN CAKE

4 qt. popped corn
1 lb. small gumdrops
1/2 lb. salted peanuts
1/2 c. butter or margarine
1/3 c. salad oil
1 lb. marshmallows

Grease tube pan with butter. Mix popped corn, candy and nuts. Melt butter and oil in saucepan. When melted, pour over popcorn mixture. Press into greased tube pan. When cool, run knife around edge of pan to help get cake out. Turn upside- down on plate. Cut with serrated knife.

Roberta,.Momence,.Il (10:21:28) : The weather has been quite chilly lately, and here's another recipe for everyone to try.

Mexican Hot Chocolate

In a heavy saucepan, add 2 cups of milk and 2 cups of cream. To that mixture, add 1 cup of sugar, 1 teaspoon vanilla.
Heat until boiling, and then add 7 or 8 ounces of chopped chocolate, and stir until it melts, and also add 2 dashes of black pepper, or seeds from a jalapeno pepper. Heat through, and enjoy. It isn't hot, but very warming!

Prepare an Italian Meringue
Combine 1 cup of water with 16 ounces of sugar, and heat until the syrup registers 240 on a candy thermometer, or if you remove some of the syrup and add cold water to it, the sugar should feel like a soft ball.

To that mixture, add 8 egg whites, whipped to a medium peak, and a pinch of cream of tartar, and mix in slowly.

In a stainless steel bowl, over a pot of boiling water, melt 14 ounces of good dark chocolate, set aside, and in another bowl over simmering water, whip 7 egg yolks with 3 tablespoons of sugar until the yolks are ribbony, add the melted chocolate to that. To the chocolate mixture, add 1 cup of strong coffee, and combine thoroughly.
Add the chocolate mixture to the egg white/ syrup mixture, and stir. Strain, just in case there are any lumps. This can be chilled, or if desired you may add 1 envelope of leaf (powdered gelatin), combined with 3 tablespoons of water. The gelatin should be heated, and then added to the mousse, and then chilled. Whipped cream can be folded in to add lightness. I hope I haven't lost everyone. I realize this is a length process.
