Recipe: 4-H Sloppy Joes (makes 32)
Sandwiches4-H SLOPPY JOES
5 pounds extra-lean ground beef
1/4 cup dried minced onions
1/3 cup all-purpose flour
1 (8 oz) can tomato sauce
1 cup water
1 cup catsup
1/2 cup brown sugar, packed
1/4 cup cider vinegar
1/4 cup yellow mustard
2 to 3 tablespoons Worcestershire sauce
1 to 2 tablespoon chili powder
1/4 to 1/2 teaspoon bottled hot pepper sauce (optional)
32 hamburger buns, split
In a 4-quart pot, cook half of the ground beef and onion until no pink remains. Drain in colander. Cook remaining beef. Drain fat.
Return cooked meat mixture to pot. Stir in flour, tomato sauce, water, catsup, brown sugar, cider vinegar, mustard, Worcestershire sauce, chili powder, and, if desired, hot pepper sauce. Bring to boiling; reduce heat. Cover; simmer about 15 minutes, stirring occasionally. Serve on buns.
Note from source: 4-H Sloppy Joes are popular at food booths at Indiana county fairs and with hungry 4 H'ers after project meetings. Make a batch for your next picnic. You can easily halve ingredients for this sandwich.
