BROCCOLI SLAW
1 (10 ounces) bag broccoli slaw
FOR THE DRESSING:
1/3 cup orange juice
1/3 cup vinegar
2 teaspoons minced shallots
Coarse salt, to taste
1 tablespoon sesame oil
1 tablespoon grated fresh ginger
1 teaspoon yellow mustard
In a bowl, combine the orange juice, vinegar and minced shallots. Add a good pinch of salt. Let this mixture stand for 5 to 20 minutes.
Whisk in the sesame oil, grated ginger and mustard. Taste the dressing and adjust the seasonings.
Add the broccoli slaw to the bowl with the dressing and toss to combine. Serve the slaw immediately.
Makes 4 servings
