Turkey Gumbo

1 turkey carcass
4 to 6 cups leftover turkey meat
1 cup oil
1 cup flour
1 large or 2 small onions -- chopped
6 to 8 green onion with tops -- sliced
4 large or 6 small stalks celery -- sliced
1 green bell pepper -- chopped
4 tbl fresh parsley -- chopped
2 cloves garlic -- minced
salt and pepper
3 bay leaves
1 tbl thyme
1/8 tsp cayenne (or to taste)
1 (10oz) pkg frozen sliced okra -- optional
chicken broth

Boil carcass in 2 qts water for 1 hr. Pick meat from bones. Strain broth. Add chicken broth to make about 3 qts. liquid.

Make roux: Heat oil in heavy skillet, over med. heat. Remove skillet from heat. Gradually add flour until well blended. Return to stove; cook, stirring constantly, over very low heat until rich dark brown, about 45 min.
add vegs. and continue to cook 10 min. more, stirring constantly.
add turkey; cook and stir 5 min. more. Add to broth. Add seasonings and simmer 1-1/2 to 2 hrs. Serve over rice.

holly (01:50:45) : Baked Apples
Yield: 6 servings

6 large Baking apples
12 tb Brown sugar
1/2 tsp Cinnamon
1 1/2 tsp Butter
1/4 tsp Nutmeg

1. Wash and core apples, then remove a 1 inch strip of peel around the
middle of each apple.
2. Place apples in a 2 quart square baking dish.
3. Mix sugar, and spices in a small bowl. 4. Fill center of each apple with mixture and dot with 1/4 tsp. butter.
5. Add enough water to baking dish to cover the bottom of the dish.
6. Bake uncovered, at 350 until apples are tender. Baste with glaze
occasionally.

Serve warm, covered with some of the baking glaze and real whipped cream.
*** 1/2 c of raisins can be added to the sugar and spice mixture. ***
or Granny Smith apples are great for this.

holly (01:40:49) : PINEAPPLE & BANANAS WITH COCONUT SYRUP

1 c Brown rice syrup
1 c Water
1 c Coconut milk
2 tsp Rosewater, optional
2 c Pineapple, peeled & chopped
2 c Cantaloupe, seeded & cubed
2 Bananas, sliced

In a medium sized pot, combine syrup & water. Bring to a boil, reduce
heat & simmer until the mixture thickens slightly, about 15 minutes.
Remove from heat.
Stir in coconut milk & rosewater & chill for 1 to 2 hours. Arrange
fruit in a large serving bowl. Pour syrup over the top & serve
slightly chilled or at room temperature.
