Bacon Tomato Appetizers

2 quarts cherry tomatoes
1 pound bacon
1/2 cup mayonnaise -- (Not salad dressing)

DIRECTIONS:

With a knife cut off a thin top of each tomato (stem part) and discard. Scoop out inside from tomato (a half teaspoon works really well)and set tomato aside. Fry bacon until brown. Cook and crumble. Add mayonnaise. Put bacon filling into each tomato.
Tastes like a bacon, lettuce and tomato sandwich. Can be made ahead and chilled.
My note: I've stuffed them with cream cheese and bacon. Also, with cream cheese mixed with the dry hidden Valley Ranch. I also find cutting the other end off easier as they sit up better.

Cherry Tomato Parmesan

1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 tablespoon olive oil
1/4 teaspoon coarsely ground black pepper
1 garlic clove, crushed
2 pints red and/or yellow cherry tomatoes
2 tablespoons chopped fresh parsley

Preheat oven to 425 degrees.
In small bowl, combine breadcrumbs, Parmesan cheese, olive oil, pepper, and
garlic.
Place cherry tomatoes in shallow 1 1/2-quart casserole or 9 1/2-inch
deep-dish pie plate. Top with breadcrumb mixture; sprinkle with parsley. Bake
20 minutes or until tomatoes are heated through and crumbs are browned.
