Recipe(tried): 2 Cookie Recipies

Hi Barb! Here are my 2 favorite lowfat cookie recipes. The first is of my own creation. The second is based upon something I found but improved upon. Hope they're what you're lookin' for. :-)
G's Health Nut Cookies
Yield: 3 dozen

1 1/4 cup whole wheat flour
1/4 teaspoon salt
1/2 teaspoon baking soda
2 tablespoons low-calorie margarine
cup honey
2 eggs, beaten
1 teaspoon vanilla extract
1 cup chopped nuts - I use walnuts
Optional: 1 cup carob or chocolate chips (I don't add these)

Preheat oven to 350.
Cream the butter, honey, egg and vanilla.
Add the dry ingredients to the creamed mixture and stir in the carob chips and nuts.
Drop by rounded teaspoons onto ungreased cookie sheet.
Bake for 10 to 12 minutes or until cookies are puffed and their bottoms are lightly browned.Copycat Recipe For Snackwells Devil's Food Cookies
Yield: 30 cookies @ 70 calories per cookie

1/4 cup reduced calorie margarine
2/3 cups sugar
cup nonfat buttermilk
1 teaspoon vanilla extract
2 egg whites
1 cups all purpose white flour
cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
cooking spray

Cream together the margarine and sugar until light.
Beat in the buttermilk, vanilla and egg whites, beating until fluffy.
Add flour, cocoa, baking soda and salt.
Drop by tablespoonfuls 2" apart onto sprayed cookie sheets
Bake for 7 minutes, set aside to cool and ice.

Chocolate Icing
4 cups confectioner's sugar
1/4 cup bakers cocoa
cup milk
