Recipe: Maui Beany-Weenies (microwave)

MAUI BEANY-WEENIES

1/2 onion, chopped
1/2 green bell pepper, chopped
1 minced garlic clove
2 Tablespoons canola oil
1 (15 oz.) can red kidney beans, rinsed and drained
1 (15 oz.) can black-eyed peas, rinsed and drained
1/2 lb. reduced-fat beef hot dogs (4 or 5 dogs), sliced
1/2 teaspoon hot-pepper sauce
1 (8 oz.) can pineapple chunks in juice, drained, half of juice reserved
1/2 cup shredded low-fat sharp Cheddar cheese

In a 2 qt. microwave-safe dish, stir the onion, pepper and garlic with the oil until thoroughly mixed. Microwave on high for 2 to 4 minutes.

Stir in the beans, peas, hot dogs, hot-pepper sauce and the pineapple and its juice. Bury the dogs in the bean mixture so they stay juicy. Top with the cheese.
