Misc.STUFFED GREEN PEPPERS
6 sm. green peppers, tops removed &
seeded
1 lb. ground ham (approx. 3 c.)
1/3 c. raw rice
2/3 c. water
1/2 c. chopped onion
1/2 tsp. salt
1/4 c. ketchup
1 c. ketchup
1/2 c. water
4 carrots, peeled & cut in 3" pieces
Wash peppers; drain well. Salt lightly. Combine in medium bowl: Ground ham, rices, water, onion, salt and 1/4 cup ketchup. Mix well. Stuff peppers 2/3 full. Arrange stuffed peppers in crock pot with carrot pieces to help support peppers. Pour in ketchup and water. Cover and cook on low for 6-8 hours (or high 3 hours). Serve on bed or rice - pour tomato sauce over top.
BEAN CASSEROLE
1/2 lb. bacon, browned and chopped
1 lb. hamburger, browned
1 c. chopped onion
1 can baby lima beans
1 can pork and beans
1 can butter beans
1 can kidney beans
1/4 to 1/2 c. brown sugar
1/2 c. ketchup
Bake at 350 degrees for 2 hours or 4 hours in a crock pot.
NANNY'S BEAN SOUP
2 cans Trappey's jalapeno beans
2 cans white navy beans
2 cans Campbell's bean & bacon soup
2 c. diced ham
1/2 bell pepper, chopped
1 lg. onion, chopped
1 c. water (if cooking in crock pot),
or 3 c. water if cooking in boiler
Combine all ingredients. If cooking in crock pot, cook at least 3 hours on high or all day on low. If cooking in boiler, cook until thick and done.
BEAN CHALUPA
2 lbs. dry pinto beans
1 lg. onion, chopped
3 cloves garlic, crushed
24 oz. can chopped chilies
1 1/2 tbsp. chili powder
3 to 4 lb. pork roast
1 1/2 tsp. oregano
1 1/2 tbsp. salt
1 1/2 tbsp. cumin
Place beans, roast and all other ingredients in heavy kettle or crock pot. Cover with water and simmer covered until beans are tender and meat falls off bone. Remove all bone and fat from meat. Return to beans and cook uncovered until thick. Serve over regular size fritos with the following side dishes: Grated cheese Chopped onion Chopped tomato Chopped olives Chopped avocado Sour cream Taco sauce
BANANA NUT BREAD
1/2 c. oleo
1 c. sugar
2 eggs
1 tsp. soda
4 sm. ripe bananas
3 tbsp. water or milk
2 c. flour
1/2 c. chopped nuts
Cream sugar, oleo, beat in eggs, one at a time. Add water and mashed bananas. Thoroughly mix other ingredients. Pour into greased 2 pound coffee can. it fits in crock pot. Cook 3 hours on high. In oven, bake 55 minutes.
PUMPKIN TEA BREAD
1/2 c. oil
1/2 c. sugar
1/2 c. brown sugar
2 eggs, beaten
1 c. solid pack pumpkin
1 1/2 c. flour
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. baking soda
1 c. chopped nuts
1/2 c. chopped dates or raisins
Blend oil and sugars. Stir in eggs and pumpkin. Sift together dry ingredients and add to pumpkin mixture. Mix well. Stir in nuts and dates. Pour into a well greased and floured 2 pound coffee can. Put in crock pot, turn to HIGH. Cover can with 4 or 5 paper towels and put lid on. Bake for 3 to 4 hours. Crockpots vary so check after 2 1/2 hours.
HONEY WHEAT BREAD
2 c. warm reconstituted dry milk (or
skim milk)
2 tbsp. vegetable oil
2 tbsp. honey
2 tbsp. molasses
3/4 tsp. salt
1 pkg. active dry yeast
3 c. whole wheat flour
3/4 c. bran
1/4 c. wheat germ
Preheat crock pot on high setting for 30 minutes. Combine warm (not hot) milk, oil, honey, molasses, salt, yeast and half the flour. With electric mixer, beat well for about 2 minutes. Add remaining flour; mix well. Place dough in well-greased baking pan; cover. Let stand 5 minutes. Place in crock pot, cover and bake on high setting 3 hours.
BUTCH'S RICE CASSEROLE
1 c. Uncle Ben's rice
2 cans beef consomme
1 can drained mushrooms
1 med. chopped onion
1 clove chopped garlic
3/4 stick margarine
Combine all ingredients in crock pot and cook on low all day; or cook in 350 degree oven for 2 to 2 1/2 hours.
HAMBURGER CROCKPOT CASSEROLE
2 lbs. browned ground beef
3 carrots, peeled and sliced
2 onions, sliced
4 potatoes, peeled and sliced
1 can peas, drained
2 stalks celery, diced
1 can cream of chicken soup
1 can water
Place potatoes in bottom of crock pot, top with carrots and other vegetables. Place ground beef on top. Combine soup and water and pour over ground beef. Cover and cook on low for 6 to 8 hours. Meadville Lodge #219
BEEF AND MUSHROOM CASSEROLE
1 1/2 lb. stew meat, cut in bite-size
pieces
1 can cream of mushroom soup
1 soup can water
1 (8 oz.) can mushrooms, drained
1 pkg. dry onion soup mix
Mix all together and bake at 325 degrees for 3 hours in a covered casserole dish. Serve over potatoes or noodles. I have also put this in the crock pot on low for 6-8 hours.
CHICKEN WOW
2 cans cream of mushroom soup
2 cans whole kernel corn
1 whole chicken, cooked, deboned, and
cut up
2-3 cubes potatoes, baked
Melt 1 stick butter with 3 tablespoons Grey Poupon mustard. Brown chicken and potatoes in this. Set aside. In microwave, cook 1 medium cubed zucchini with 1 stick of butter and 1 tablespoons Lawry's salt-free. Cook until soft. Put all ingredients in crock pot, including cans of soup and corn. Add 1 more tablespoon of Grey Poupon mustard and cook about 4 hours on low setting. (Temperature and cooking time may be adjusted to fit your needs.)
CROCK POT CHILI
2 lbs. ground beef
Desired amount of onion
1 lg. can whole tomatoes, puree
2 cans kidney beans
1 tsp. salt
Pepper
1 bay leaf
1 tsp. Worcestershire sauce
Chili seasoning packet
1 to 2 tsp. chili powder
1/4 tsp. cayenne pepper or to taste
Brown hamburger with onion. Add rest of ingredients and mix. Cook in crock pot.
FIVE-SPICE BEEF CASSEROLE
2 tbsp. oil
3 slices ginger
2 cloves garlic, chopped
1 onion, sliced
2 1/2 lbs. stew beef, cut in 1 inch
cubes
1 whole star anise
1 1/2 cinnamon sticks
1/2 tsp. five spice powder
3 tbsp. soy sauce
1 1/2 tsp. sugar
2 c. beef stock
Heat wok over high heat with oil. Add ginger, garlic, and onion. Stir fry for 1 minute. Add beef chunks and continue to stir fry for 2 to 2 1/2 minutes on high heat. Add remaining ingredients and mix well. Transfer to a heat-proof casserole, cover and cook on range over medium low heat for 2 to 2 1/2 hours or bake in oven at 350 degrees for same time or in crock pot all day. Serves 6.
PEPPERONI PIZZA CASSEROLE
1 sm. can mushrooms
2 lbs. hamburger
1 sm. onion
1 tsp. oregano
2 cans pizza sauce
1 box rotelle macaroni twists
Pepperoni slices
Mozzarella cheese
Brown meat with onion, oregano, salt and pepper. Add mushrooms and pizza sauce. Cook rotelle (do not over cook). Add to hamburger mixture. Pour one half in buttered crock pot or casserole and top with layer of pepperoni and Mozzarella cheese (shredded) and another layer of pepperoni. Top with rest of meat mixture and another layer of pepperoni and cheese. Bake at 325 degrees for 45 minutes to 1 hour. Do not over bake. Only heat until cheese melts.
TUNA NOODLE CASSEROLE
1 (8-10 oz.) pkg. noodles, cooked and
drained
2 (10 oz.) cans cream of celery soup
2/3 c. dry sherry or milk
1/3 c. milk
1 pkg. frozen mixed vegetables, thawed
2 tbsp. parsley flakes
2 (7 oz.) cans tuna, drained
1/2 c. toasted, sliced almonds
2 tbsp. melted butter or margarine
In a large bowl, thoroughly combine soup, sherry, milk, vegetables, parsley flakes, and tuna. Fold in noodles (don't over cook, cook just until tender). Pour into greased crock pot. Top with almonds and butter. Cover and cook on low 8-10 hours. (High: 3-4 hours.) Serves 6-8.
BROCCOLI CASSEROLE
1 (1 1/4 lb.) pkg. frozen broccoli
1 c. instant rice
1 1/2 c. celery, chopped (optional)
1 1/2 c. onions, chopped (optional)
1 can cream of celery soup
1 can cream of mushroom soup
1 sm. jar Cheez Whiz
1 stick butter, melted
Mix all ingredients in a crock pot. Turn on high for about one hour, then turn on low. Ready to serve when to desired taste.
HAM CASSEROLE
1 c. ham, cubed
1 c. noodles
1 can cream of chicken soup
1 (8 oz.) can corn, whole kernel,
drained
1/2 c. cheese, grated
Cook noodles, toss in vegetable oil. Mix all ingredients. Grease crock pot. Cook on low 4 to 6 hours. (May be doubled.)
PORK CHOP CASSEROLE
6-8 pork chops
Salt and pepper
2 med. potatoes, pared and sliced
1 lg. onion, sliced
1 green pepper, sliced
1/2 tsp. leaf oregano
1/4 tsp. whole thyme
1 (14 oz.) can tomatoes
Trim visible fat from pork chops, season with salt and pepper and brown in skillet to remove excess fat. Place pork chops and remaining ingredients in crock pot. Cover and cook on high 3-4 hours.
BUSY DAY CASSEROLE
1 pkg. (10) frozen burritos
1 pt. fresh salsa
1 lg. can enchilada sauce
1 lb. sharp Cheddar cheese
Place first 3 ingredients in a crock pot on low heat setting. Allow 4 hours until serving time. Add grated Cheddar cheese 1/2 hour before serving.
HASH BROWN CASSEROLE
1 (32 oz.) pkg. frozen hash browns
1 pt. sour cream
1/4 c. chopped onion
2 cans mushroom soup
10 oz. Cheddar cheese
1/2 c. butter or margarine
Combine in crock pot, cook on high for 4 hours. Then turn to low until serving. Can be baked in casserole at 350 degrees for 45 minutes. Sprinkle cheese on top and bake a few minutes more.
COMPANY CASSEROLE
2 1/2 to 3 c. chicken broth
1 1/4 c. raw converted rice
1/2 c. melted margarine
3-4 c. cut-up cooked chicken
2 (4 oz.) cans sliced mushrooms
6 tbsp. soy sauce
12 oz. pkg. frozen shelled shrimp
(optional)
8 green onions, chopped
2/3 c. slivered almonds
Mix rice with melted margarine in crock pot. Stir to coat rice thoroughly. Add all remaining ingredients, except 2 tablespoons of green onions and slivered almonds. Stir well. Sprinkle reserved almonds and green onions on top. Cover and cook on low 7-9 hours or high 3-4 hours.
TAMALE CASSEROLE
1 (15 oz.) can tamales
1 (15 oz.) can chili con carne
1/2 onion, chopped
1 sm. can chopped olives
3/4 c. Frito corn chips, crushed
1 c. grated Cheddar cheese
Combine above ingredients, excluding tamales, in crock pot. Stir just enough to fold in ingredients. Unwrap tamales and lay them across the top. Cover and cook on low for 4-5 hours, or on high for 2-3 hours. Check towards the end of cooking time, stirring at least twice. Serves 5.
KARL'S COMPLETE (HOT) CASSEROLE
1 sm. crooked neck squash
1 green or red bell pepper
1 stick celery
1 banana pepper
1 clove garlic
1 sm. onion
1 (#2) can stewed tomatoes
1 tsp. Italian seasoning
1 tsp. chili powder
2 tsp. rice
2 tsp. quick pearled barley
1/2 lb. or more hamburger
Salt and pepper to taste
Chop squash (do not pee). Take out seeds. Chop peppers, celery, onion, and garlic. Fry hamburger; drain. Add altogether, add remaining ingredients in crock pot and simmer for 2-3 hours. Add salt and pepper and water according to taste. This recipe is HOT!
COWBOY CASSEROLE
1 potato per serving
1 can red beans for every 4 to 5
servings
1 onion
1 can tomatoes plus 2 tbsp. flour or
1 can tomato soup for every 6
potatoes
1/4 lb. hamburger for each serving
Salt
Pepper
Garlic
Put hamburger in bottom of a roaster or casserole dish. Dice onion over meat, slice potatoes over onion. Dump beans on top and spread tomatoes over all. Add seasonings as you like them. Cover with foil and put in a moderate oven (325 degrees) or over a camp fire until potatoes are tender, about 2 hours. Also works well in crock pot.
MOCK CHOP SUEY CASSEROLE
1 lb. hamburger
1 c. celery
1/4 tsp. onion salt or onion
3 to 4 tbsp. soy sauce
1 c. Minute rice
1 can cream of mushroom soup
1 can cream of chicken soup
Brown hamburger with celery, add onion and soy sauce. Mix rice in a casserole dish or in crock pot with soups, and hamburger mixture. Mix well. Add more water or soy sauce, if necessary. Bake at 350 degrees for 1 hour. Decorate with chow mein noodles before and after baking. Great in crock pot for travel.
KRAUT - CA - PO CASSEROLE
1 med. cabbage
Barley, hand full
2 lg. cans sauerkraut
2-3 lb. pork roast
1 qt. tomatoes, or more if you like
8 oz. fresh mushrooms or 1 lg. can
Cut cabbage in bite size pieces. Drain 1 can sauerkraut. Combine all ingredients together and cook slowly on top of stove or in large crock pot until pork falls off the bone. May be served with mashed potatoes as main dish or as side dish. We like it either way! Serves 8-10.
STUFFED CABBAGE CASSEROLE
2 lbs. ground chuck
4 c. shredded cabbage
1/2 c. Minute Rice
1 sm. sauerkraut
1 tomato soup
2 (#2) cans tomatoes
1/4 c. brown sugar
1/2 tsp. lemon juice
SAUCE:
1 lg. onion (saute)
1 tomato soup
2 (#2) cans tomatoes
1/4 c. brown sugar
1/2 c. water
1/2 tsp. lemon juice
Layer meat, rice, cabbage, salt. Place on top of layered mixture. Note: If using crock pot, layer sauce with other ingredients. Sprinkle sauerkraut on top. Bake covered, 350 degrees 1-2 hours; 275 degrees 3- 4 hours.
CROCK POT STROGANOFF
2 lb. round steak
1/4 c. flour
1/2 tsp. pepper
1/2 tsp. salt
1 tsp. garlic bits
3 tbsp. butter
1 sm. onion, chopped
1 tbsp. soy sauce
2 beef bouillon cubes
1 can cream of mushroom soup
1 c. water
Cut steak into 1 x 1/2 inch strips. Mix with flour, pepper, salt and garlic. Add to crock pot with rest of ingredients. Cook on low for 5 hours. Stir occasionally. Last 1/2 hour, add 1 (8 oz.) package of cream cheese, cubed. Serve over cooked wide noodles.
CROCK POT EASY SWISS STEAK
2 to 2 1/2 lbs. round steak
1 pkg. onion soup mix
1/4 c. water
1 (10 oz.) can cream of mushroom soup
Cut steak into 5 to 6 serving size pieces. Place in crock pot. Add dry onion soup mix, water and soup. Cover and cook for 6 to 8 hours. Excellent with mashed potatoes. If you like lots of gravy use 2 packages soup mix and 2 cans of soup.
ANNE'S CHICKEN FOR CROCK POT
1 frying chicken, cut up
Salt & pepper
1 can cream of mushroom soup
1/2 c. sauterne or sherry
2 tbsp. butter or margarine, melted
2 tbsp. dry Italian salad dressing mix
2 (3 oz.) pkgs. cream cheese, cut in
cubes
1 tbsp. onion, chopped
Wash chicken and pat dry. Brush with butter. Sprinkle with salt and pepper. Place in crock pot. Sprinkle with dry salad mix. Cover and cook on low for 5 to 6 hours. About 3/4 hour before serving, mix soup, cream cheese, wine, and onion in small saucepan. Cook until smooth. Pour over chicken in pot. Cover and cook for 30 minutes on low. Serve with sauce. Serve with rice or noodles. Serves 4 to 6.
ENCHILADA CASSEROLE
2 lbs. lean ground beef
1 med. onion, chopped
1 clove garlic, minced (I use 1 tsp.
garlic powder)
1 (15 oz.) can tomato sauce
2 to 3 tbsp. chili powder or to taste
Salt & pepper
8 flour tortillas
1 can cream of chicken soup
3/4 c. milk
2 c. Cheddar cheese, shredded
Brown beef, onion and garlic. Add tomato sauce and chili powder; salt and pepper. Heat thoroughly. Spray crock pot with Pam. Line with 2 tortillas. Cover with 1/3 of meat mixture and cheese. Layer 2 more times beginning with tortillas, meat mixture and cheese. Top with 2 more tortillas. Combine soup and milk. Pour over top tortillas. Sprinkle with remaining cheese. Cook on low for 4 to 5 hours. (Can also be baked in casserole dish in oven at 350 degrees for 45 minutes.)
CROCKPOT DRESSING
1 (8 inch) pan cornbread
8 slices dry white bread
4 eggs
2 c. chicken broth
2 cans cream of chicken soup
1 tsp. sage
1/2 tsp. black pepper
Celery to taste
1 med. onion
2 tbsp. butter
Mix ingredients except butter. Place in crock pot. Dot butter on top. Cook 2 hours on High then 4 hours on low.
CROCK POT MEAT SAUCE
12 oz. chili sauce
10 oz. grape jelly
1 tbsp. Worcestershire sauce
Put ingredients in crock pot. Mix well. Add hot dogs, meatballs, sausage or whatever kind of meat you prefer. Heat on low until meat is hot or done. Depends on what meat you use. Great for parties.
