Hi Becca,

I am planning to have a 4th of July celebration also and one of my favorite desserts for a big crowd is Peanut Butter Ice Cream Pie. It is sooooooo simple to make and really delicious. You can whip up three or four in a jif.Peanut Butter Ice Cream Pie

1 9 inch graham cracker crust (I use Keeblers)

2 Tbsp.chopped peanuts

1 cup cool whip
1 quart vanilla ice cream
1/2 cup chunky peanut butter

Place ice cream in mixing bowl and stir to soften. Stir in peanut butter, then fold in cool whip. Spoon this mixture into the crust , sprinkle the chopped peanuts around the edge of pie to garnish. Freeze until firm...takes aobut 5 hours. Cuts easier if removed from freezer about 10 minutes before serving. Serves 8.

Drizzle a little chocolate syrup or even better, warm hot fudge over the top of each individual piece of pie after you have put it on each individual serving plate. Yummmy.,,,so easy.
