Recipe: 9 Recipes Using Buttermilk

Buttermilk Scalloped Potatoes

2 very large baking potatoes -- thinly sliced
1/4 cup flour
1 teaspoon salt
1 medium onion -- chopped
2 tablespoons butter
2 cups buttermilk
salt and pepper -- to taste

Peel potatoes and slice very thin...about 1 qt. when sliced). Combine salt and flour and dredge potato slices in that. Place in 9x13 dish. Saut onion in butter until tender, add buttermilk to pan just long enough to warm but not boil. Pour mixture over potatoes, sprinkle with pepper or paprika. Bake in 350 oven for 1 hour or until tender.

**I used one bunch of fresh green onions....added color to the dish. I placed half of the potatoes in dish, green onion and then layer of shredded cheddar cheese, then rest of potatoes and green onions. Then poured mixture over potatoes. Just before serving, I topped the casserole with more shredded cheese.Debbie.D.,.AL (12:51:03 PM) :

BUTTERMILK

My Favorite Overnight Coffee Cake

2 c. flour
1/2 c. brown sugar
1 tsp baking powder
1/2 tsp salt
1 c. buttermilk or sour cream
2 eggs
1 c. sugar
1 tsp soda
2/3 c. shortening

Topping
1/2 c. brown sugar
1 tsp cinnamon
1/2 c. chopped nuts

Grease and flour a 9 x 13 pan.
Blend all cake ingredients together until moist. Beat 3 minutes. Pour into prepared pan. Mix topping and pour over top. Cover and refrigerate overnight.
Bake at 350 degrees for 30 to 40 minutes. 12 servings.

EASY STRAWBERRY ICE CREAM

2/3 cup very cold buttermilk
1 tsp. orange extract
2 10-oz. pkgs. frozen strawberries, slightly thawed
fresh strawberries and wafer cookies, for garnishing

Place buttermilk and orange extract into blender or food processor. Cut slightly thawed fruit into chunks and add to blender. Whirl until mixture is smooth and is at ice cream consistency. Serve immediately. Place ice cream mixture into pretty parfait glasses and garnish with strawberries and cookies.

Buttermilk Biscuit Sticks

Serving Size : 24

2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
2 teaspoons finely shredded lemon peel
2 teaspoons snipped fresh tarragon or 1/2 tsp. dried
1/4 teaspoon baking soda
1/4 cup butter
1 beaten egg
1/2 cup buttermilk
buttermilk
poppy seeds -- optional

Preheat oven to 425 degrees. In a med. mixing bowl stir together flour, sugar, baking powder, lemon peel, tarragon, and baking soda. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Make a well in the center of mixture. Add egg and 1/2 cup buttermilk all at once. Using a fork, stir until moistened.
Turn dough out onto a lightly floured surface. Quickly knead dough 10-12 strokes or until dough is nearly smooth. Lightly roll dough into a 12x6" rectangle. Cut into twenty-four 6" strips.
Place strips 1/2" apart on a lightly greased baking sheet. Brush with additional buttermilk. If desired, sprinkle with poppy seed. Bake for 10 min. or until buttermilk sticks are golden. Cool slightly. Serve warm.

Vegetarian Layered Tortilla Casserole
Serving Size : 8

Nonstick spray
1 tablespoon olive oil
1 large onion chopped
3 cloves garlic minced
1 cups prepared tomato salsa
12 corn tortillas
1 cups shredded Jack cheese with chilies, divided use
1 can (7 ounces) diced mild green chilies, undrained, divided use
4 eggs
1 cup buttermilk
1 can (8 ounces) creamed corn
Salt to taste
Pepper to taste
1 teaspoon dried oregano or 1 tablespoon minced fresh oregano
teaspoon ground cumin
Optional garnish - chopped cilantro
Optional garnish - prepared tomato salsa

Preheat oven to 350 degrees. Spray 9 x 13 baking dish with nonstick spray; set aside.

Heat oil in medium skillet on medium high heat. Add onion and garlic; cook till onion is softened. Remove
from heat and stir in salsa

Place 6 tortillas in bottom of baking dish. Spray with nonstick spray. Top with half of cheese and half of
canned chilies. Top with onion garlic salsa mixture. Cut remaining 6 tortillas into quarters and place on
top. Place remaining cheese and chilies on top.

In large bowl, whisk eggs, buttermilk, corn, salt, pepper, oregano and cumin. Pour over top of
casserole. Using a fork, lift and jiggle some of the top layer of tortillas so some of the egg mixture will
drizzle down. Bake in preheated oven for 45 to 50 minutes or til top is set and browned.

Allow to rest 15 minutes. If desired garnish with fresh cilantro and tomato salsa.

8 Servings.

Buttermilk Herb Dressing

2/3 C Buttermilk
1/3 C Olive Oil
1 1/2 Tbsp Lemon Juice
1/4 C Mayonnaise -- Or A little More
3 Tbsp Chives
1 Tsp Tarragon
2 Tsp Ground Green Peppercorns
1/2 Tsp Salt
1/4 Tsp Sugar

Whisk buttermilk, olive oil, lemon juice and mayo in a small bowl until mix is blended and smooth. Blend in remaining ingredients. Cover and chill at least 30 mins. Makes about 1 1/2 cups.

ORANGE MUFFINS

2 cups all-purpose flour
3/4 tsp. baking soda
1/2 cup raisins
1/3 cup orange juice
1/3 cup butter, melted
1/3 cup sugar
3/4 tsp. salt
1 egg, beaten
2/3 cup buttermilk

Sift dry ingredients together; add raisins. Combine egg, orange juice, buttermilk, and melted butter. Add liquid ingredients to dry ingredients, mixing only enough to moisten all of the flour. Fill greased muffin pans 3/4 full. Bake at 400 degrees, 20 to 25 minutes. Yield: 12 muffins.

BUTTERMILK DRESSING

1 cup buttermilk
1 cup mayonnaise
1/4 tsp. onion salt
1/4 tsp. garlic salt
1/4 tsp. celery salt
1/4 tsp. MSG (optional)
1/8 tsp. black pepper
1/2 tsp. crushed parsley flakes

Combine all ingredients in a large jar and shake well. Delicious on tossed salads, taco salads, or baked potatoes.
