I am at the library posting this message...I wanted to share 2 delicious recipes that I made last night for dinner. My daughter and son-in-law brought their adorable twins, Kate and Max and baby Charlie to visit me. We had a fun time playing and running and doing mostly what 2 1/2 years olds like to do.

They eat very healthy and I was surprised at the different types of food they ate. For dinner last night I made:

Baked Lemon and Basil Chicken
Yellow Rice
Greek Beans
Garlic Bread
Texas Hill Country Peach Cobbler
Sweet Iced Tea

I had picked up some yummy sweet and juicy peaches on the way to Georgia and I made the most delicious cobbler. Here is the recipe and it is an easy one. You can make the entire cobbler in a 8x12-inch baking dish or make it in 3 8x8-inch aluminum pans. I gave one to a neighbor, froze one and had the other one out for company. When you take out the frozen one again, let it thaw then put it in the oven at 350 for about 20 minutes. The crust will become crusty again.

Texas Hill Country Peach Cobbler
serves 8-10

about 12-14 ripe peaches, leave peel on and slice
1 1/2 c. sugar divided
1 T. cinnamon
1 stick butter
1 c. milk
1 c. flour
3 t. baking powder
1/2 t. salt

Sift together the flour, 1 cup sugar and baking powder. Mix in a bowl with milk. Set aside

Melt butter in baking dish in oven. Take pan out and pour batter in. Do not mix! Layer the peach slices over the batter. Mix together 1/2 c. sugar and cinnamon and sprinkle over peaches. Bake at 350 for 1 hour.

The batter will rise up and cover the peaches!

I also made these delicious Greek Beans. I got the recipe from friends here in Georgia and it is a delicious dish! The twins just loved it and so did their parents! I love to make this yummy dish when I come to Georgia, it is quite irristible!!

Greek Beans

serves: 8-10

2 lb. bag of frozen green beans
1 large can (28 oz.) cut up tomatoes
salt and pepper to taste
1/4 c. olive oil
1 regular size onion, chopped

In a large casserole dish, layer beans first, pour the olive oil over, salt and pepper to taste. Layer the chopped onions and pour the tomatoes and juices over this.

Bake in a 350 hour for 45 minutes or you can microwave on high for about 20-25 minutes. The onions should be cooked and wilted. If microwaving, stir every 15 minutes.

I also found some great books at the library for sale...$1.00 each!! One is Ya-Ya's in Bloom by Rebecca Wells. She also wrote Divine Secrets of the Ya-Ya Sisterhood, a wonderful read!

The other book I found is a biography of Eudora Welty by Suzanne Marrs. I have always wanted to read a bio on Miss Welty and it is set in Mississippi around the Depression era...can't wait to get into that!
