Recipe(tried): Herbed Tomato Soup with Yogurt (blender or food processor)
SoupsHERBED TOMATO SOUP WITH YOGURT
(Diabetic Friendly)
3 cups vegetable tomato juice (V-8)
1 Tbsp. chopped fresh basil or 1/2 tsp. dried
1 tsp. chopped fresh oregano, or 1/2 tsp. dried
1 Tbsp. chopped fresh chives
1 Tbsp. chopped fresh parsley
2 cloves garlic, crushed
1/2 cup plain yogurt
Salt and pepper, to taste
Place all ingredients except salt and pepper in a blender or food processor. Blend for 30 seconds.
Transfer to a covered container and refrigerate until chilled, at least 1 hour. Season with salt and pepper before serving.
Makes 4 servings
