Recipe: A few Beef Round Recipes for Susan - Round Up Beef, Ranch Round Steak, Eye of Round Roast with Onion Sauce

Dear Susan:

The answer to your question is that braising is the best method for that cut of beef. Remember that you can cut the beef in steaks and use your slow cooker to cook it. The steaks will be very tender.

Round Up Beef
(20 servings)

10 lb Round, Cut Into Strips
1 c Unbleached Flour
Oil To Brown Meat
5 c Water
3 c Catsup
1 1/4 c Brown Sugar, Firmly Packed
1 1/4 c Red Wine Vinegar
5 tb Worcestershire Sauce
5 Med Onions, Chopped
Salt And Pepper To Taste

Dredge strips of beef in flour, salt & pepper, brown in oil. Combine water, catsup, brown sugar, vinegar, Worcestershire, and onion. Stir well, heat and pour over beef. Bring to boil, reduce heat and cook covered until beef is tender - about 2 hours. Stir occasionally. Serves 20 - 25 and freezes well.

Ranch Round Steak
(8 servings)

3 lb Beef Round Steak
1/4 c Flour
2 ts Dry Mustard
1 1/2 ts Salt
1/8 ts Pepper
1/4 c Shortening
1/2 c Water
1 tb Worcestershire Sauce

Round Steak should be 1/2' thick, and then cut into serving pieces. Trim excess fat from meat; slash edges to prevent curling. Combine flour, dry mustard, salt, and pepper; use to coat meat. Reserve remaining flour mixture. In skillet, brown meat, half at a time, on both sides in hot shortening. Push meat to one side; stir in reserved flour mixture. Combine water and Worcestershire sauce; stir into skillet mixture. Cook and stir until thickened and bubbly, reduce heat. Cover and simmer for 1 to 1 1/4 hours or until meat is tender. Remove meat to platter. Skim excess fat from gravy. Drizzle gravy over meat and serve.

Eye Round Roast Beef With Onion Sauce

Yield: 10 Servings

3 lbs onions, diced
6 lb eye round roast
2 cans Italian plum tomatoes
1/4 c fresh basil, chopped
1 tsp salt
2 lb large bow tie macaroni
4 tb olive oil
1 can tomato paste
2 garlic cloves, peeled
1/2 tsp pepper

Saute diced onions for about 20 minutes in olive oil until translucent and soft. Add tomato paste and cook for 2-3 minutes. Put plum tomatoes in blender for a few seconds. Add tomatoes and garlic to pot with onions and paste. In separate pan, brown eye round on all sides in a small amount of oil. Add meat to sauce and simmer slowly for 3 hours. remove garlic cloves. Carve roast into thin slices and serve with bow ties and sauce. The large quantity of onions make this a sweet, delicious sauce.
