Recipe(tried): A good cilantro dressing

Hi Jimmy - this is NOT a a recipe from Chili's and I'm afraid I don't know what that dressing tastes like. I did want to share this recipe with you, in case it is close. There is a little bit of heat in this dressing, depending on the peppers used, of course. This has been a big hit as a dressing for coleslaw, and it might be something you can use (and modify, if needed) in your search for that Chili's recipe. Hope it helps!

Roasted Poblano and Cilantro Dressing
Makes about 2 cups

2 large or 4 medium fresh poblano or anaheim chiles, roasted and peeled (or use canned
mild green chilis - about 6 oz.)
2 medium scallions, coarsely chopped
2 garlic cloves, coarsely chopped
2 tablespoons fresh lime juice
1 cup low-fat buttermilk
1/2 cup mayonnaise
finely grated zest from one lime (do zest first, then squeeze juice)
juice of 1 lime
1/2 cup fresh cilantro leaves, coarsely chopped
1/4 tsp. sugar (increase to 1/2 tsp. for coleslaw)
Salt (start with 1 tsp. table salt OR 2 tsp. kosher or sea salt ) and lots of freshly ground
pepper

Puree all ingredients until fairly smooth in a blender or food processor. Taste for seasoning (remember, the dressing will be used on a salad, so the amount of salt needs to be enough for the dressing plus the salad ingredients). Use as a salad dressing for a green salad, or as a dressing for coleslaw or potato salad.
