Yield: 2 dozen
1 1/2 cup unsalted butter, room temperature
2/3 cup sugar
3 cup flour
1 1/2 tbsp curry powder
1 tsp paprika
1/4 tsp chili powder
1 tsp turmeric
1/4 tsp cayenne
Preheat oven to 350. Place butter in large bowl and beat until light in texture. Add sugar and whip together until light and fluffy. Sift flour with spices. Stir into butter and mix thoroughly. Roll the dough out between two sheets of plastic wrap to about 1/2-inch thick and about 12x16-inch. Place in freezer for about 30 minutes. Either cut with a 2-inch cookie cutter or place the dough onto the bottom of a cookie sheet. Bake for 30 minutes or until shortbread is firm to the touch and is a golden color. Remove from the oven and allow to cool on a wire rack. Remove cookies from sheet with a spatula or break large piece of shortbread into serving pieces.
