This is the closest recipe I have found for the Vienna loaf from Clifton's! Enjoy
CLIFTON'S CAFETERIA VIENNA STYLE MEAT LOAF
stock - 1 cube beef
mince - 18 oz (500 g) to 22 oz (600 g)
eggs - 2
savory - a pinch
brandy - 1 tsp
pork - 3.5 oz (100 g) smoked breast / bacon*
bread - 4.5 oz (125 g)
carrots - 1
leeks - 1 sprig
garlic - 1 clove
butter - 1 1/3 tbsp (20 g)
black pepper
salt
wine - 1 cup
Pilsbury Pizza dough 1 can
Preparation of Vienna Style Meat Loaf
One stock cube is dissolved in 4/5 cup (200 ml) of hot water. In it, soak, 4.5 oz (125 g) / 1 slice / bread. The carrots are grated, leeks cut into slices, garlic is crushed mechanically.
Steam the vegetables with 2 tablespoons water. Once you take out the water, add butter and simmer for another 5-6 minutes, then add the pepper.
The minced meat is kneaded with the bread soaked in broth, add the eggs and savory and 1 tablespoon cognac. Grease a cake form and pour half the minced meat in, then on it, place the filling of vegetables and cover with the rest of the mince.
Soak with wine and arrange slices of smoked bacon. Wrap the pizza crust around the loaf and seal with watered fingers if necessary.
Bake at 350 degrees F (180C) for 30 minutes, then cover with foil for baking and bake for 15 minutes until ready. For best results cook on a flat baking sheet with parchment paper under the loaf!
*You can omit the bacon from this recipe if you choose!
