Recipe: A-Z Bread (quick bread with list of 32 possible additions)

Breads - Muffins, Quick Breads
A-Z BREAD

3 cups flour
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons ground cinnamon
1/2 teaspoon baking powder
3 eggs
1 cup oil
2 cups sugar
2 cups A to Z mix (see choices below)
3 teaspoons vanilla
1 cup nuts, chopped

Preheat oven to 325 degrees F. Grease 2 loaf pans well.

Sift dry ingredients and set aside.

Beat eggs in a large mixing bowl. Add oil and sugar, cream well. Add A to Z mix and vanilla to egg mixture. Add sifted dry ingredients. Mix well and stir in chopped nuts. Spoon into prepared loaf pans.

Bake at 325 degrees F for 1 hour.

A-Z MIX CHOICES:
Use 1, or a combination or the following, to equal 2 cups (except as indicated)

Apples, grated
Applesauce
Apricots, chopped
Bananas, mashed
Carrots, grated
Cherries, pitted and chopped
Coconut, fresh, ground
Cooked tapioca
Dates, pitted and chopped
Eggplant, ground
Figs, finely chopped
Grapes, seedless
Honey (omit sugar)
Lemon juice, 1/2 cup
Marmalade (omit 1 cup sugar)
Mincemeat
Oranges, chopped
Peaches, chopped fresh or canned
Pears, chopped
Peppermint, 1/2 cup chopped fresh
Pineapple, drained crushed
Prunes, 1 cup chopped pitted
Pumpkin, canned puree
Raisins
Raspberries
Rhubarb, chopped
Strawberries, fresh or frozen (thawed and drained)
Sweet potatoes, grated
Tomatoes (add an extra 1/2 cup sugar)
Yams, cooked and mashed
Yogurt, plain or flavored
Zucchini, grated

Makes 2 loaves
