I made this recipe and cookies are wonderful - got it from a friend.
PEARL BAILEY'S PECAN COOKIES
Source: Beth Glendening - saved off some cooking magazine.
No eggs!
1 1/2 cups butter or margarine, softened (I will use only 2 sticks not 3)
1 cup firmly packed light brown sugar
2 teaspoons granulated sugar
2 1/2 cups all purpose flour
2 cups chopped pecans
2 teaspoons buttermilk or plain yogurt
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Preheat oven to 375 degrees F. Grease 2 large cookie sheets.
In large mixer bowl cream butter and sugar until light and fluffy.
Add remaining ingredients.
Drop by rounded teaspoonfuls onto cookie sheets.
Bake 10 minutes. Cool on wire racks
Makes about 7 dozen cookies, about 60 calories each.
