Recipe: Acorn Squash & Apples (1 way)

George, I know this is not quite what you wanted, but thought I'd post it anyway. Happy Holidays!

Acorn Squash Rings

(For a change add 1/2 cup chopped cranberries
and 1 peeled and separated orange to the squash
rings for a different flavor.)

1 or 2 medium acorn squash
3 or 4 apples, peeled and halved
1/3 cup orange juice
1/3 cup apple cider or juice

Sugar mixture:
1/4 cup packed brown sugar
2 Tbsp light corn syrup
2 Tbsp butter

Cut squash crosswise into 3/4
inch rings. Discard seeds.

Spray or lightly oil a 9x13-inch
baking dish.

Arrange slices in pan and place
an apple half in center of each.

Pour juices over all.

Bake covered in a 350 degree
oven for 30 minutes.

Combine brown sugar, corn
syrup, and butter in saucepan for
stove or dish for microwave.

Bring to boil, then reduce heat
and simmer 1 minute, stirring
constantly.

Brush mixture on squash and
bake uncovered for another 30
minutes until squash is tender.
Add more juice during baking if
needed.
