Recipe(tried): Almond Roca

Here is one that is a little different than Kathy's. It's pretty time consuming - but closest to the real thing that I have seen.

1 c. melted butter
2 c. sugar
1/4 c. light corn syrup
1/2 c. water
2 16 oz. Hershey's Milk Chocolate bars, grated and divided into equal portions
1 1/4 c. blanched chopped almonds

Put 1st four ingredients in pan and cook over medium heat to 285 deg. (hard crack (35-40 mins.). Stir a lot till sugar dissolves. When mixture starts to boil - DON'T scrape sides of the pan - stir every 5 minutes until mixture is light caramel brown. Line jelly roll pan with lightly buttered foil (Edges above pan). Pour cooked mixture into pan.
Sprinkle 1st half of Hershey's chocolate over top. Spreak with knife. Sprinkle 6 oz. very finely chopped almonds - pressing down w/ hands. Refrigerate until hard enough to invert and peel foil off. Melt remaining Hershey's and spread over exposed side. Sprinkle remaining almonds. Chill until set. Break into pieces and place in a sealed container.
