Recipe(tried): Outback Restaurant Potato Soup

The recipe for Outback Potato soup is:

Potatoes, diced, boiled and drained; save till the end

In large pot combine:
4 cans chicken broth
2 cups water
1 onion, diced
Salt and pepper
Dash basil..i omit
Dash sugar..i omit
Bring above to a boil.

Melt together:
2 sticks (1 cup) butter
3/4 cup flour
Add to pot slowly, while stirring.
Add the prepared potatoes.

Add slowly to thicken:
Approximately 1 1/2 cups heavy cream

Garnish with:
Chopped fried bacon
Chopped chives
Grated Monteray jack and cheddar cheese

I know this recipe because I worked there for many many years.
