MACAROON PIE:
3 egg whites
1 cup sugar
12 saltine crackers; crushed
15 dates; chopped
1 cup nuts; chopped
1/2 tsp. soda
1 tsp. almond extract
1 tsp. vanilla
1/2 tsp. butter flavoring
1/2 pint fresh whipping cream, whipped
Preheat oven to 350. Grease pie pan. Beat egg whites until stiff; gradually add 1 cup sugar.
Fold in crackers, dates, nuts, soda and extacts.
Pour into pie pan and bake for 20 min. Cool. Serve with whipping cream.

20 dates (1/3 lb.)
1/2 cup pecans
12 soda crackers
3 egg whites
1 cup sugar
1/4 tsp. baking powder
1 tsp. almond extract
1 tsp. vanilla
1/2 tsp. butter flavoring
Pinch of salt
Chop dates and pecans. Crush crackers and mix with dates and nuts. Beat 3 egg whites very stiff.
Mix sugar and baking powder, and add slowly to egg whites; add extracts and salt. Fold in date and nut mixture.
Bake in well buttered pie tin at 300 for 25 min. May serve with whipped cream.
NOte by Janie: Both of these are good and keep well. You'd never guess they had crackers in them!
I always add 1 tsp. vanilla and 1/2 tsp. butter flavoring to these.
