APPLE OATMEAL COOKIES
3/4 cup solid vegetable shortening
1 1/4 cups firmly packed brown sugar
1 large egg
1/4 cup milk
1 1/2 teaspoons vanilla extract
1 cup flour
1/2 teaspoon salt
1 1/4 teaspoons ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon ground nutmeg
3 cups quick-cooking rolled oats, uncooked
1 cup peeled and finely diced apple (any baking apple)
3/4 cup golden raisins
3/4 cup chopped walnuts
Preheat oven to 375 degrees F.
In a large bowl, combine shortening, brown sugar, egg, milk and vanilla. Beat at medium speed until well blended.
In a small bowl, combine flour, salt, cinnamon, baking soda and nutmeg. Gradually add to creamed mixture, mixing just until combined.
Using a wooden spoon, stir in oats, apples, raisins and walnuts. Drop rounded tablespoons of dough about 2-inches apart onto greased cookie sheets.
Bake at 375 degrees F for 10 minutes or until just set. Remove from oven and cool about 2 minutes, then transfer to wire racks and cool completely.
