Recipe(tried): Apple Salad with Cranberries and Tuxedo Brownies for Graduation Party

I have a great salad recipe and a killer brownie recipe-see below

APPLE SALAD WITH CRANBERRIES

FOR THE SALAD:
10 oz mixed greens
1 medium red apple, diced*
1 medium green apple, diced*
1 cup shredded parmesan cheese
1/2 cup dried cranberries
1/2 cup toasted slivered almonds
FOR THE DRESSING:
1 cup cranberries, fresh or dried
1/2 cup sugar
1/2 cup white vinegar
1/2 cup apple juice concentrate (i have omitted and also used regular juice)
1 tsp ground mustard
1 tsp grated onion
1 tsp salt
1 cup vegetable oil

Mix salad ingredients in bowl (you can double or triple easily).

In a blender - blend all dressing ingredients except oil till smooth. Add oil in a steady stream.

Drizzle dressing on salad just before serving. Do not dress ahead.

*If not dressing the salad right away, the diced apple may be tossed with fresh lemon juice to prevent browning.

This recipe will make more than you need so do not use all till you test for taste.

This is a great salad and everyone always asks for the recipe.


TUXEDO BROWNIES

1 package brownie mix
1/2 cup seedless raspberry jam
2 cups fresh raspberries, divided use (I have used frozen)
2 packages (8 oz each) cream cheese, softened
1/2 cup powdered sugar
2 squares (1 oz each) white chocolate, melted and cooled slightly
1/4 cup milk
1 (8 oz) container frozen whipped topping (Cool Whip), thawed

Preheat oven to 350 degrees F. Lightly spray bottom of 9x13-inch baking pan with vegetable spray.

Prepare brownie mix according to package directions and bake. Cool completely.

Spread jam onto brownies. Reserve 1/2 cup of raspberries for top and sprinkle rest of raspberries onto brownies.

Combine cream cheese and powdered sugar in bowl; mix well (can use beater). Whisk in melted white chocolate and milk (you can melt in microwave if you wish or over a double boiler).

Fold in whipped topping. Carefully spread over top of brownies. Refrigerate 1 hour or more.

Cut into squares and garnish with reserved raspberries.

Absolutely delicious...my kids (grown- in their 30's) like these better than anything.
