Recipe(tried): Applesauce Cake - sugarless

Spicy apple cake made with applesauce:

1/4 C soft butter, 3 eggs, 1/2 c unsweetened apple juice, 1/2 c unsweetened applesauce, 2 c flour, 2 tsp baking powder, 1 tsp baking soda, 2 tsp cinnamon, 1 apple peeled, cored and thinly sliced.

Beat together butter, eggs, apple juice and applesauce. Add all remaining ingredients (except apple slices). Beat well. Oil and flour an 8" square pan. Line the pan with one layer os sliced apples. Spoon batter over apples and smooth. Bake 350 for 25-30 minutes. Invert on wire rake to cool - apple side up. Serve with warm apple sauce over top. (You can make your own applesauce by cooking slightly 6 medium apples and then whipping in a food processor until consistency you like).
