This recipe is from Crazy Plates. I would probably peel that potatoes, that's what I normally do when making sweet potato fries.
MY YAMMY SPICE
4 medium yams or sweet potatoes
1 tbsp. olive oil
1/2 tsp. ground cumin
1/2 tsp. paprika
1/2 tsp. dried oregano
1/4 tsp. salt
1/4 tsp. black pepper
Spray a baking sheet with non-stick spray and set aside. Wash potatoes and pat dry using paper towels. Leave skins on. Slice potatoes into French-fry-like wedges, about 1/2-inch thick. Toss wedges with olive oil in a large bowl.
In a small bowl, stir together remaining ingredients. Add to potatoes and toss until they're evenly coated with spice mixture.
Arrange potatoes in a single layer on baking sheet. Bake at 450 degrees F. for 25 minutes, turning wedges over halfway through baking time. Serve hot.
Makes 4 servings.
