Recipe: Applesauce Streusel Loaf (using grated apples, makes 3 loaves)

1 1/4 cups flour
1 cup sugar
1/4 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup shortening
1 cup walnuts, chopped
1 cup peeled, cored and grated apples
2 eggs, well beaten
1/4 cup milk
Streusel Topping (recipe follows)
In a large mixing bowl combine flour, sugar, cinnamon, baking soda, salt and shortening. Blend until mealy. Mix in walnuts.
In a small bowl blend apples, eggs and milk thoroughly. Add to flour mixture and mix until all dry particles are moistened. Pour into greased and floured 8 x 4-inch loaf pan, sprinkle with Streusel Topping.
Bake at 350 degrees F for 45 minutes or until wood pick comes out clean.
Cooled loaves may be wrapped and frozen.
STREUSEL TOPPING
1/4 cup brown sugar, packed
1/4 cup flour
1/4 teaspoon ground cinnamon
1/4 cup butter or margarine
1/2 cup peeled, cored and chopped apples
1/2 cup walnuts, chopped
Blend brown sugar, flour, cinnamon and butter until crumbly. Mix in apples and. walnuts and sprinkle over batter before baking.
Makes 3 (8-inch) loaves
