Recipe: Almond Baked Halibut (with garlic and lime baste and butter-toasted almond garnish)

ALMOND BAKED HALIBUT

3 lb halibut fillets
1 tbsp salt
1/2 tsp pepper
3 limes, juice of
1/4 cup oil
2 cloves of garlic crushed
TO SERVE:
1/2 cup sliced almonds
1 tbsp butter or margarine
lime wedges

Preheat oven to 500 degrees F.

Arrange fish in a shallow low baking pan. Season with salt and pepper.

Blend together lime juice, oil, and garlic; brush over fish.

Bake for 10 minutes; turn over, baste with juice.

Lower oven temperature to 425 degrees F and bake 15 to 20 minutes longer or until fish flakes easily with a fork. Baste several times during cooking.

TO SERVE:
Saute almonds in butter or margarine until golden brown. Serve fish with almonds sprinkled on top and garnish with lime wedges.
