Recipe: Chicken Piccata Ole (using crushed red pepper)

CHICKEN PICCATA OLE

"This lightly fried chicken has a lemony zest that complements the flavorful sauce spiked with a taste of chile. This one-skillet entree is great for quick weeknight dinners. I like to serve it with a side of fresh pasta and roasted or grilled vegetables."

1 large egg
3 tablespoons lemon juice, divided use
1/4 cup flour
4 chicken breast halves, skinned and boned
4 tablespoons (1/2 stick) butter
2 teaspoons chicken bouillon granules dissolved in 1/2 cup boiling water
1 teaspoon crushed red pepper

Beat the egg with 1 tablespoon of the lemon juice.

Place the flour on a flat surface. Dip each chicken breast in the egg mixture, then in the flour.

Melt the butter in a large skillet and brown the chicken in the butter over medium heat.

Add the chicken bouillon liquid, remaining lemon juice, and crushed red pepper to the skillet. Cover and simmer for 20 minutes or until the chicken is tender.

Makes 4 servings
