This must be the week for nostalgic recipes. This is the third one from my childhood that I have posted this week!
OVEN-FRIED CHICKEN WITH PEACHES
2 1/2 to 3 lb. broiler fryer, cut up.
Flour for coating, seasoned with salt and pepper
1 large can peach halves, drained with juice reserved
Preheat oven to 425 degrees F.
Coat chicken parts with seasoned flour.
In a shallow baking pan sprayed with non-stick coating spray, melt 1/4 stick butter or margerine by placing pan in the oven. Watch carefully so it doesn't burn.
Arrange chicken in single layer with skin side down.
Bake, uncovered, 30 minutes.
Tuck drained peach halves around chicken. Drizzle some of the reserved peach juice over each chicken piece, then turn chicken pieces over and continue baking for about 15 more minutes or until chicken pieces are fork-tender. Serve chicken surrounded by peach halves.
