CHICKEN OR TURKEY HASH
3 tablespoons butter
1/2 cup chopped onion
1 teaspoon dried rosemary
2 cups cubed cooked chicken or turkey
2 cups cubed cooked potatoes
1 cup chicken or turkey gravy (or heavy cream or a mixture of both)
salt and freshly-ground black pepper (to taste)
1 tablespoon finely-chopped parsley
Heat the butter in a large skillet until foaming. Add the onion and rosemary and cook until the onion is soft.
Add the chicken or turkey and potatoes, stir well, and cook for 3 to 4 minutes, pressing down with a spatula to form a flat cake.
Lower the heat to medium-low and pour in the gravy and/or cream. Sprinkle with salt and pepper and cook for 5 minutes more.
Turn out onto a serving platter and sprinkle with parsley.
