Recipe: Italian Chicken Spirals with Basil Mayonnaise (make ahead)

ITALIAN CHICKEN SPIRALS

12 thin slices pancetta or 6 thin slices prosciutto
6 large skinless, boneless chicken breast halves
3 large mustard greens, center rib removed
1/2 cup fresh mascarpone
1 tablespoon olive oil
1/4 teaspoon paprika
Basil Mayonnaise (for serving)
yellow or red sweet pepper (optional, for serving)

If using pancetta, cook in a medium skillet over medium heat till lightly browned, but not crisp. Drain on paper towels. Set aside.

Place a chicken breast half, boned side up, between two pieces of clear plastic wrap. Pound lightly to 1/4-inch thickness. Repeat with remaining chicken breast halves. Set aside.

Heat a 10-inch skillet over medium heat. Add 1 tablespoon water and a mustard leaf. Cover and heat about 1 minute or till leaf is wilted. Drain on paper towels. Repeat process with remaining leaves, using 1 tablespoon water with each. Halve leaves.

Place a chicken breast half, smooth side down, on a cutting board or other flat surface. Season with salt and pepper. Arrange two slices of pancetta (or one slice of prosciutto) atop chicken. Spread a rounded tablespoon of mascarpone evenly over pancetta. Arrange half of a mustard leaf on top.

Roll chicken tightly and place, seam side down, in a greased, shallow baking pan. Repeat with remaining chicken breast halves. Combine oil and paprika; brush on chicken.

Bake in a 375 degree F oven for 25 to 30 minutes or till chicken is tender and no longer pink; cool. Cover and refrigerate several hours.

TO SERVE:
Cut each chicken roll into six slices. Serve with Basil Mayonnaise. For a serving bowl that is edible, too, slice a yellow or red sweet pepper in half crosswise, scoop out the seeds, and fill with Basil Mayonnaise.

BASIL MAYONNAISE

3/4 cup mayonnaise
1/2 cup loosely packed fresh basil
1/2 small shallot
1/2 clove garlic

Place ingredients in a food processor bowl. Process till almost smooth. Cover and chill up 4 hours.

Makes 36 slices
