BAKED BEEF AND CHEESE MACARONI
1 (7 ounce) package elbow macaroni
3/4 pound ground beef
1 small onion, chopped
1 (15 ounce) can tomato sauce
1/2 teaspoons salt
1 1/2 cups grated Parmesan cheese (6 ounces), divided use
1/8 teaspoon ground cinnamon
1 1/4 cup milk
3 tablespoons margarine, butter or spread
2 eggs slightly beaten
1/8 teaspoon ground nutmeg
Heat oven to 325 degrees F. Grease square baking dish, 8x8x2-inches.
Cook and drain macaroni as directed on package.
Cook beef and onion in large skillet over medium-high heat, stirring occasionally, until beef is brown; drain. Stir in tomato sauce and salt.
Spread half of the macaroni in baking dish. Spread beef mixture over macaroni.
Mix 1/2 cup of the cheese and the cinnamon; sprinkle over beef mixture. Spread with remaining macaroni.
Cook milk and margarine into quart pan, stirring occasionally, until margarine is melted; remove from heat. Gradually stir at least half of the milk mixture into eggs; stir back into milk mixture in pan. Pour over macaroni. Sprinkle with remaining 1 cup cheese.
Bake uncovered 50 to 60 minutes or until top is golden brown and center is set. Sprinkle with nutmeg.
