BAKED TUSCAN CHICKEN
1 tablespoon extra-virgin olive oil
3 cloves garlic, minced
1 tablespoon chopped fresh rosemary
1 teaspoon fresh thyme
1 tablespoon lemon juice
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
2 pounds bone-in chicken thighs (6 to 8 thighs)
Preheat oven to 375 degrees F. Coat a jelly-roll pan or baking sheet with cooking spray.
Combine oil, garlic, rosemary, thyme, lemon juice, mustard, salt and pepper in large bowl; toss with chicken. Place chicken on prepared pan, allowing plenty of room between pieces.
Bake until an instant-read meat thermometer inserted in the center of the thickest thigh registers 175 degrees, about 35 to 40 minutes.
Makes 4 servings
