Recipe: Domco Delight Cake with Peanut Frosting (carrot cake using baby food, 1960's)

DOMCO DELIGHT CAKE

In October 1965 the Dothan, Alabama annual National Peanut Festival was held.Mrs. James Travis Mixon of Graceville, Florida won the peanut recipe judging with her cake entry called, Domco Delight.

FOR THE CAKE:
4 eggs
1 1/2 cups Domco brand peanut oil
2 cups granulated sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
2 cups all purpose flour
2 jars (2.5 oz each) stained carrots (baby food)
1/2 cup raisins
1 teaspoon vanilla

FOR THE FROSTING:
1 (16 oz) box confectioners sugar
1 (8 oz.) pkg. cream cheese, softened
1/2 cup Domco brand peanut oil
1 teaspoon vanilla
1 cup chopped roasted peanuts

TO PREPARE THE CAKE:
Preheat oven to 350 degrees F. Grease 3 layer cake pans.

Cream together the eggs, oil and sugar and mix well. Add baking soda, salt, cinnamon and flour. Mix well. Stir in the strained carrots, raisins and 1 teaspoon vanilla. Mix well; divide batter between prepared pans.

Bake about 30 minutes at 350 degrees F. (Remove cake from pans and cool on a wire rack to cool.)

TO PREPARE THE FROSTING:
Combine all frosting ingredients. Mix well and spread on cold cake layers.
