Brig, Most cookie recipes can be divided in half rather easily, so you can still use your favorite recipe. If you need help halving it, post it here on this board and we'll see what we can do for you.
Alternatively, both PB cookies and unbaked PB cookie dough freeze well. You can freeze the dough in a clump or in individual balls the right size for popping onto a cookie tray. You don't have to defrost them before baking them that way, tho they might need an extra minute in the oven. If you want that classic criss-cross design on them, go that far thru the recipe, freeze the cookies on the cookie sheet (maybe lined with parchment paper to make them easier to remove), and then put them in a proper freezer container once they're hard.
If you freeze baked cookies, you can pop them in the oven for just a couple of minutes so you can have them nice and warm when you're ready to eat them!
