BARNEY'S DINER SHRIMP SALAD
1 cup shrimp cooked but cold (small whole or diced)
6 hard boiled eggs, diced
1/2 cup diced celery
1/4 cup diced carrots
Salt and pepper, to taste
chopped fresh onion, to taste (Barney did not use onion, but some people like it)
2 cups Miracle Whip salad dressing (or to taste)
Combine all ingredients, adding Miracle Whip last. Refrigerate.
NOTES:
"I am Barney's granddaughter. I did some checking with my mom, aunt, grandmother and grandfather. Barney did not cook from recipes, it was all in his head. We all tried to watch and learn. So what we remember is that he used egg salad and put shrimp in it. He always used Miracle Whip, not mayonnaise." - Kate Hendricks of Allentown
