Recipe(tried): BBQ Beef & Ribs Dinner - Red Barn Special CrockPot BBQ, Classic Potato Salad, Sweet Bourbon Baked Beans

Today is going to be another crockpot dinner as I have to bake another cake....

I don't know where I got this from, but it is good....

Red Barn Special CrockPot BBQ
serves 8

1 lb. beef stew meat
1 lb. country style pork ribs
1/4 cup chili powder (or to taste) - see note
4 garlic cloves, minced
1 green pepper, chopped
1 large onion, chopped
1 (6 oz.) can tomato paste
1/4 cup brown sugar
1/4 cup cider vinegar
1 tsp. yellow prepared mustard
1 tsp. liquid smoke
1 tsp. worcestershire sauce
salt and pepper to taste

Mix all the sauce ingredients well and cover the meats in the crockpot. Cook 10 hours on low in the crockpot.

Note: I also added 1/2 cup dark brown sugar to counter-balance some of the chili powder. It wasn't that hot. Next though, I will only put a tablespoon of chili powder which I believe is quite enough.

I am going to serve this with a potato salad and baked beans and some soft rolls. Each recipe I will cut in half since it is only my husband and I....

Classic Potato Salad
serves 8

1 cup Hellman's mayo
2 Tbsp. vinegar
1 1/2 tsp. salt
1 tsp. sugar
1/4 tsp. black pepper

6 medium potatoes, peeled, cubed, and cooked
1 cup sliced celery
1/4 cup finely chopped red onion
6 hard-boiled eggs, chopped
1/3 cup chopped gherkin pickles
1/2 cup red bell pepper, chopped
1/2 cup green bell pepper, chopped

Combine 1st 5 ingred. in a large mixing bowl. Stir in remaining ingredients and toss gently but thoroughly to coat with sauce.

Cover and chill.

Sweet Bourbon Baked Beans
Servings: 8-10

1/2 lb. bacon, cut into 1-inch pieces
1 onion, chopped
3 (16 oz.) cans baked beans
1 (15 oz.) kidney beans, drained
2 Tbsp. dark molasses
2 Tbsp. dark brown sugar
1/3 cup bourbon
1/2 cup chili sauce
1 tsp. dry mustard
1 tsp. cinnamon

Cook bacon til crisp, drain. Set aside. Saute onions in drippings. In a bowl, mix the beans together with the onions, mustard, molasses, sugar, bourbon, chili sauce and cinnamon. Add the bacon bits and fold in gently. Pour into a 2 qt. bean pot or casserole, oven at 350 and bake covered for 40 minutes, let stand 15 minutes before serving.
