This was the Winner in the 1993 Arkansas Beef Cook-Off Just ran across it looking for another recipe. Prepared by: Vina Calhoun

BEEF ROLL-UP MEXICANO

8 4-oz cubed steaks
1 tablespoon chilli powder
1 1/2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon garlic powder
2-4oz cans whole green chiles, halved and seeded
3 oz Monterey Jack cheese
2 tablespoons vegetable oil
1/2 cup picante sauce
1/4 cup plain yogurt
1 stalk fresh broccoli

Marinate steaks in Italian dressing for 15 minutes in refrigerator. Mix together chili powder, cumin, salt, and garlic powder. sprinkle on steaks. Place a green chili half and one strip of cheese in center of each steak. Roll lengthwise. Tuck edges under and secure with string. Brown roll-ups in vegetable oil in heavy skillet. Place in 10x10x2 baking dish. Bake at 400 degrees for 30 minutes until done. Remove from oven. Arrange roll-ups on platter. Top each with 1 tablespoon picante sauce and 1 1/2 teaspoons yogurt. Garnish with broccoli flowerettes. Serve immediately.
