Recipe #1---BEEF STROGANOFF--Traditional--Serves 2--Double for 4 Servings

1/4 teasp. salt
1/2 pound beef sirloin, cut into 1/4-inch-wide strips
2 Tablesp. butter
1/2 cup thinkly sliced fresh mushrooms
1 small onion, chopped (about 1/4 cup)
1 small clove (fresh) garlic, peeled and finely chopped
1 and 1/2 Tablesp. tomato paste
3/4 cup condensed beef broth
1/2 cup sour cream
1 Tablesp. sherry

Combine flour & salt in a paper bag; shake meat in mixture until coated; Heat
1 Tablesp. of the butter in a large skillet. Brown meat on both sides. Add mush-
rooms, onion & garlic; cook about 3 min. or until onion is barely tender. Remove
meat and mushrooms from skillet.

Add remaining tablespoon butter to skillet; blend in flour; cook 1 minute. Stir in tomato paste; stir in borth slowly. Cook, stirring constantly, until mixture thickens and bubbles. Return meat and mushrooms to skillet. Stir in sour cream and sherry. Heat, but do not boil. Serve with parsley rice or noodles, if you wish.
