Recipe: Beer and Lime Marinated Salmon

Beer & Lime Marinated Salmon

1/4 c. fresh lime juice 60 mL
1/3 c. beer 75 mL
3 Tbsp. soy sauce 45 mL
1/2 Tbsp. minced fresh ginger root 8 mL
2 garlic cloves, minced 2
1 Tbsp. minced onion 15 mL
1 lb. fresh B.C. salmon fillets 500 g
2 Tbsp. each finely diced red, green 30 mL
& yellow bell peppers
2 Tbsp. lime zest (2-3 limes) 30 mL
Freshly ground black pepper

Combine all ingredients except salmon, bell peppers, lime and pepper; mix well. Wipe salmon pieces; place in a shallow glass or ceramic dish; pour marinade over top; turn salmon pieces several times to fully coat all sides; cover; refrigerate overnight.

Preheat oven, broiler or barbecue. Remove salmon from marinade; discard marinade. Broil, grill, bake or barbecue until fish flakes in centre (about 10 minutes per 1"/2.5 cm thickness).

Serve with finely diced bell peppers, lime zest and pepper on top.
