Recipe: Beer Paprika Batter
Misc.Barlow Foods Recipe No. 145
Beer Paprika Batter:
1cup flour
1 tsp. baking powder
1 tsp. salt
1 tsp. paprika
1 egg
1 cup beer
Combine dry ingredients; stir in egg and beer; add more beer if batter thickens upon standing.
Beer Tobasco Batter: combine 2 slightly beaten eggs with 2/3 cup beer, 1/4 tsp. Tobasco, 1 cup flour, 1 1/2 tsp. salt and 1 TBS. cooking oil; beat until smooth.
Buttermilk-Beer Batter: Combine 1 cup buttermilk pancake mix, 1 tsp. salt and 3/4 cup beer; beat until smooth.
Heat oil or shortening (1"deep ) in deep skillet or electric fry pan until hot enough to brown a cube of bread in 1 minute (375 degrees). Dip fillets or small fish in batter, cook in hot fat until browned and crisp, turning once. DO NOT OVERCOOK> Cook only until fish flakes easily with a fork, (3-4 min.).
A Fisherman's Tip: Marinate fish in beer for several hours, drain and cook as above.

1 cup pancake flour
1 cup cornmeal
1 can warm, stale beer
