HONEY WALNUT CARAMELS
1 cup half-and-half or evaporated milk
1 cup honey
2 teaspoons flour
1/2 teaspoon salt
1/4 cup (1/2 stick) butter or margarine
1 teaspoon vanilla extract
1 cup chopped walnuts
Butter an 8-by-4-inch or a 9-by-5-inch loaf pan.
In a heavy 1- to 2-quart saucepan over medium heat, combine half-and-half, honey, flour and salt, stirring to dissolve sugar and any lumps that form from the flour.
Add butter. Bring to boil over medium heat, stirring constantly. Cook, stirring frequently, to firm ball stage (248 degrees, measured on a candy thermometer).
Remove from heat. Stir in vanilla and walnuts. Pour into buttered pan.
Cool and cut into squares. Wrap each piece individually in plastic. Store in airtight container.
Makes about 1 pound
