Recipe: Western Bean Salad (using salsa)

WESTERN BEAN SALAD

FOR THE SALAD:
1 (15-ounce) can pinto beans, drained and rinsed
1 (15-ounce) can garbanzo beans, drained
2 cups cherry tomato halves
1 cup CHI-CHI'S Salsa
1/2 pound bacon, cooked and crumbled
1 small red onion, sliced (1/8-inch)
Lettuce Leaves
FOR THE DRESSING:
1/4 cup vegetable oil
2 tablespoons white wine vinegar
1 teaspoon sugar
3/4 teaspoon chili powder
1/4 teaspoon coarsely ground pepper
1/4 teaspoon salt

In large bowl, combine all Salad ingredients except lettuce leaves. Mix well; set aside.

In small bowl, combine all Dressing ingredients. Mix well. Toss with Salad. Cover; refrigerate 1 hour to blend flavors.

Serve on lettuce leaves.

Makes 6 to 8 servings
