Recipe: Bill Knapp'S Chicken 'N Biscuits (Chicken Fricasse) (tips only)
Main Dishes - Chicken, PoultryADVERTISEMENT
BILL KNAPP'S (CHICKEN 'n BISCUITS) otherwise known as CHICKEN FRICASSE - I believe what made their Chicken 'n Biscuits sooooo good was actually the HIGH chicken fat content. While most of us (these days) try to cut extra fat by draining off fat, I don't believe MOST restaurants (including Bill Knapp's do this) - it GREATLY adds to the flavor of their dishes.
***Also, the BK Chicken Gravy was made with flour vs. corn starch and the biscuits were BAKING POWDER biscuits, which were almost always pre-buttered with REAL BUTTER.
