TOSTONES CON POLLO
(SIMILAR TO BAHAMA BREEZE'S)

3 green plantains
1 cup olive oil
1 cup fresh mushrooms
1/3 stick butter or margarine
1 teaspoon minced garlic
1-1/2 boneless, skinless chicken breasts
Cracked black pepper in a pepper mill (to taste)
Salt (to taste)
Jerk Seasoning (to taste)
1 15 ounce can sliced black olives
2 cups of four grated cheeses (cheddar, Monterey Jack, parmesan & mozzarella)
1/2 large tomato, chopped
Sour Cream (optional)
PLANTAIN PREPARATION:
3 green plantains, peeled and sliced diagonally in 1/4 inch strips.
Fry in 1 cup olive oil till golden brown, drain then flatten slightly with the smooth side of a meat tenderizer
MUSHROOM PREPARATION:
Saut 1 cup mushrooms in a pan with 1/3 stick margarine or butter and 1 tsp. minced garlic
CHICKEN BREAST PREPARATION:
1-1/2 boneless, skinless chicken breasts chopped up in small pieces and seasoned with cracked black pepper, salt and jerk seasoning to taste.
EVERYTHING ELSE:
Layer the bottom of a glass rectangular casserole dish in fried plantain strips.
Cover with 1-1/2 cups cheeses (shredded cheddar, Monterey Jack, parmesan and mozzarella).
Cover with 1/2 15 oz can sliced black olives
Cover with chicken breast
Cover with 1/4 cup cheeses
Cover with saut ed mushrooms
Cover with remaining sliced olives
Cover with 1/4 cup cheeses
Bake at 350 degrees till the cheese starts to melt then add 1/2 of a large tomato, chopped to the top. Serve with or without sour cream.
