Recipe: Lemon-Mint Couscous

LEMON-MINT COUSCOUS

1 cup couscous
2 tablespoons fresh lemon juice
1 tablespoon extra-virgin olive oil
finely grated zest of two large lemons
1/4 cup coarsely chopped fresh mint
1 carrot, cut into tiny dice
salt and freshly ground black pepper, to taste

Bring 2 cups water to a boil over high heat in a medium-size saucepan. Remove the pan from the heat, stir in the couscous, cover, and let rest for 5 minutes.

Uncover and fluff the grains with a fork. Transfer the couscous to a bowl. Add the lemon juice, olive oil, and lemon zest and stir with a fork. Stir in the mint and carrots. Season with salt and pepper and serve.
