BILL WILLIAMS HOME-FRIED CHICKEN
1/2 cup buttermilk
1/2 cup whole milk
1 cup flour
1 teaspoon black pepper
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon Tony Zatarain's (or other spice mix of your choice)
Canola oil for frying (or any vegetable oil)
1 (2-3 pound) frying chicken, cut into pieces
Gravy (optional, for serving)
Mix the milks together in one dish. Mix the flour and spices in another dish.
Heat 1-inch of the oil in a heavy large skillet.
Coat the chicken pieces in the flour mixture, then dip into the milk mixture followed by a second coating of the flour mixture.
Fry until lightly browned on one side, about 5-7 minutes. Turn the pieces over and cover with a tightly fitted lid. Cook until that side is golden about 10 minutes. Turn again, cover and cook for another 10 minutes. You will have beautiful, evenly browned chicken. Remove and drain on paper towels.
Serve with gravy, if desired.
