Recipe(tried): Black Bean and Roasted Garlic Chili, Pumpkin Spice Bread Loaf

When I was packing some of our food for the trip I mistakenly took a can of black beans instead of the pinto beans for the chili. Well, it was the best mistake I have ever made. This is one of my best chili's and the neat thing is I didn't have to use salt as the canned black beans already had their special condiments included.

It was so good that I decided to make it again as the weather has turned chilly for us here in Central Florida. This chili can be prepared and eaten within the hour. It is robust and thick and great accompanied with hot buttered corn bread!! (I use Jiffy Corn Bread mix and add 1 T. sugar.)

Later on with a good cup of coffee we will enjoy Pumpkin Bread!

Black Bean and Roasted Garlic Chili
serves 4-6

1 lb. ground sirloin
a large onion, chopped coarse
1 large sweet red bell pepper, seeded, cored and chopped coarse
3 garlic cloves, minced
3 T. olive oil
1 can Kirby's Black Beans
1 8 oz. can tomato sauce
1 can (14.5 oz.) Contadina Diced Tomatoes with Roasted Garlic
1 package Carroll Shelby's Chili Mix
1 t. cinnamon
1 t. brown sugar
cayenne pepper to taste

Brown the meat in a large skillet and drain any fat. Set aside. Saute onions and pepper in the oil til limp. Add garlic and cook for 2 more minutes. Add the meat and sauteed veggies to a large pot and stir to blend over medium heat. Add the tomato sauce, the diced tomatoes, beans, cinnamon and brown sugar. Add the large
seasoning packet too and stir well. Add the cayenne pepper to taste and cook for another 20 minutes. Will be nice and thick and robust.

Pumpkin Spice Bread Loaf

This is sooo good....
3 cups flour
2 tsp.s baking powder
1 1/4 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/4 allspice
2 eggs
1 16 oz. can pumpkin
1 cup packed dark brown sugar
1/2 cup maple syrup
1/4 cup veg. oil
1/2 cup raisins
1/2 cup chopped pecans

Preheat oven to 350.
Mix 1st 6 ingredients. Set aside. In another bowl, beat eggs together with pumpkin, brown sugar, oil. Blend well. Add flour and mix until just moistened. Gently stir in raisins and nuts. Pour into a greased loaf pan and bake 1 1/4 hours.
