Recipe(tried): Black Bean Hummus
Misc.I found this recipe in "Bon Appetit" and am posting it. I have made hummus for almost 30 years and this works. Unfortunately, it does not contain corn; however, you could probably add a bit at a time to achieve your end result.
BLACK BEAN HUMMUS
Joe D's Cafe, Kansas City, Missouri
Makes about 3-1/2 cups
2 15-oz. cans black beans, rinsed, drained
3/4 cup tahini (sesame seed paste)*
1/4 cup fresh lemon juice
1/4 (packed) chopped fresh cilantro
4 green onions, sliced
2 tbsp. olive oil
2 large garlic cloves, minced
1 tsp cayenne pepper
Pita bread rounds, cut into triangles
Combine first 9 ingredients in processor until smooth. Season hummus to taste with salt and pepper. Spoon hummus into bowl. Serve with pita triangles.
* Available at Middle Eastern and natural foods stores and some supermarkets
